  2. Place them between kitchen paper to absorb as much water as possible.
  3. Meanwhile, make the batter in a bowl: mix the chickpea flour (or another type) with water (or wine – I used white wine to make them even more delicious). Whisk until you get a smooth and homogeneous batter.
  4. In another bowl, pour the breadcrumbs and corn flour (see notes for replacement), oregano, spices, wild fennel, and salt.
  5. Gently dip each slice into the batter and then into the coating, and cook them at 180°C FAN for 10 minutes plus 2-3 minutes on the grill, with a bit of oil, until golden and crispy.
